Pretzel is a baked pastry made of dough and has the characteristic knot shape with three holes. The recipe comes from Europe and may have been “gifted” to us by monks from the Middle Ages. Slim, salty and with a “loose knot” shape has been loved all over the world.
1 kg of flour, 2 cups of lukewarm water, 2 tbsp. of yeast, 1/3 cup of brown sugar, 1/3 cup of olive oil, 3 eggs, 1 egg white, 2 tbsp. of salt, sesame seeds and thick salt.

Mix the flour with the yeast in the mixer. In a bowl mix the lukewarm water with the oil, the 2 tbsp. of salt and sugar, until they are well dissolved. In a large bowl whisk the 3 eggs over medium speed, then add the mixture we made with the oil and the flour with the yeast and whisk again at a higher speed.
Pour some flour until the dough is relatively firm and knead with your hands for 8-9 minutes. Cover it with a towel for 1 hour to rest and inflate. Roll out the dough on a sheet and cut into strips. Wrap 45-50 cm long “cords” and put them on a buttered baking pan and leave them for 15 minutes before baking them again with a towel covered.
Preheat the oven and whisk the egg whites and put them on our pretzels. Sprinkle with thick salt or sesame seeds and bake at 180 degrees for 20-25 minutes until they are golden brown. Allow them to cool so they do not break.
